Gooey Butter Cake

Now this is one recipe I've been asked over and over for. As a traditional St.Louis favorite, I make this recipe for all my non-St.Louis friends to show them just how awesome St.Louis really is. It's simple, delicious and has enough sugar in it to send a whole class of Kindergartners into full fledged frenzy. The recipe originated from my maternal grandfather who worked with a woman at the Mart building who made it. When he told her it was delicious and asked for the recipe she wrote it down for him and passed it on to my mom and now to me.
This dish can be served as dessert, as a treat, or as kids we ate it for breakfast like a coffee cake.


Gooey Butter Cake

Ingredients:
1 box of Yellow Cake mix
1 stick of Butter
3 eggs
1- 8oz brick of cream cheese
1 lb box of powder sugar (aprox 4 cups)
1 Tbsp of Vanilla extract
Pam or other canola oil spray


Pre-heat oven to 350F 
Spray pan with cooking spray (Pam, etc)

Mix Yellow cake mix, Butter and 1 egg with a fork to make a crust


Press crust into the bottom of an 11X9 pan

Measure out Powder sugar.  

Mix 3 1/2 c. of powdered sugar, cream cheese, vanilla, and 2 eggs in a bowl with electric beaters. It will become the consistency of pudding

Pour the mixture over the top of the crust

Bake the gooey butter cake for 30-40 minutes. 

Once cooled, sift the rest of the powdered sugar over the top. Yep that's 1 full lb of powdered sugar in each cake! Told you it's enough to send a small herd of toddlers into a tizzy!


I promise, you try this you'll love it! You can make it in a chocolate variation as well using devils food cake mix, and adding 1/2 c. of melted dark chocolate chips to the batter. Or you can add 1 tsp of almond extract to the batter for a slightly different flavor.
